Ingredients:

  •  250 grams of quinoa (or sushi rice)
  • 250 grams of cooked shrimp (or other protein such as salmon or chicken)
  • 150 grams of edamame
  • 150 grams of corn
  • 100 grams of takuan (pickled yellow radish), sliced thin
  • 1 carrot, julienned
  • 1 tomato, diced
  • 1 avocado, sliced
  • 50 grams of wakame
  • Dressing of your choice:
    • Deep roasted sesame dressing (kewpie)
    • Poke dressing (Akaya)
    • Spicy poke sauce (Nihon Shokken)
    • Yuzu ponzu citrus soy sauce (mizkan)

Instructions:

  1. Prepare the quinoa or sushi rice according to the instructions on the package.
  2. Cook the edamame and corn in separate pots until tender, then let them cool.
  3. Cut the takuan, carrot and tomato into desired shapes.
  4. Slice the avocado and set aside.
  5. Prepare the dressing of your choice and set it aside.
  6. Rinse the wakame under cold water and let it drain.
  7. Divide the cooked quinoa or sushi rice into bowls.
  8. Add the cooked shrimp on top of the quinoa or rice.
  9. Add the edamame, corn, takuan, carrot, tomato, avocado, and wakame to the bowls.
  10. Drizzle the dressing of your choice over the ingredients in the bowls.
  11. Serve immediately and enjoy your delicious shrimp poke bowl!
