Miso & Chilli Sticky Chicken Wings
Ingredients (serves 4):
12 chicken wings
50ml Mizkan Honteri
75ml Mizkan Yuzu Ponzu
1 tsp sesame oil
1 large chili, finely chopped or chili flakes
1 tbsp brown miso
2 tbsp roasted sesame seeds
Preparation:
Place the chicken wings in a bowl. Mix Honteri, Yuzu Ponzu, chili, and sesame oil. Pour over the chicken and marinate for at least 2 hours or overnight.
Preheat the oven to 200°C (fan 180°C, gas 6). Mix the miso into the chicken until fully coated. Spread the wings on a baking tray and roast for 30–40 minutes until golden brown and sticky.
Sprinkle with roasted sesame seeds and serve.

Hispi Cabbage with Ponzu Butter
Ingredients (serves 2):
Hispi or sweetheart cabbage
50g Yuzu Ponzu Butter*
10g salt
2g black sesame seeds
10g light vegetable oil
Yuzu Ponzu Butter:
1g Mizkan Yuzu Ponzu
25g butter
10g white miso
Yuzu Ponzu Butter Preparation:
Remove butter from the fridge 2 hours before use.
Beat the butter until soft with a mixer, then add Yuzu Ponzu and miso. Mix on low speed. Chill back in the fridge.
Dish Preparation:
Heat oil in a pan and add the cabbage. Cook with a lid until lightly colored.
Turn the cabbage and add ¼ cup water. Cover and cook until tender-crisp.
Remove the lid, let the water evaporate, and add half of the butter.
Serve the cabbage, heat the remaining butter, and pour over. Sprinkle with sesame seeds.

Tuna Japanese-Style Carpaccio
Ingredients (serves 2):
80g tuna
17.6g grated radish
1.2g ginger
1 tbsp Bonito Tsuyu

Preparation:
Slice the raw tuna and plate with grated radish and ginger.
Mix Tsuyu, Shiragiku, and olive oil and drizzle over the tuna in a 2:1 ratio.
